How to Make Perfect Pancakes
Light, fluffy pancakes start with the right ratio.
True Taste pancake and waffle mixes are intentionally designed to create a thicker batter than traditional pancake mixes.
Follow these simple steps for fluffy pancakes with a soft, fully cooked centre every time.
The Perfect Mixing Ratio
1 cup dry mix + ½ cup water
It is important not to reverse the measurements:
Use more dry mix than water.
Customers accidentally reverse the ratio more often than you might think! 🙈
Making a smaller batch?
Use:
½ cup dry mix (55g) + ¼ cup water (60g)
If you are finding the pancakes still look too thick, use a food weight scale.
Step 1: Mix Your Batter
Add the dry mix and water to a bowl.
Stir until the ingredients are fully combined and no large pockets of dry mix remain.
The batter should be:
✓ Thick
✓ Scoopable
✓ Similar to muffin batter
✓ Able to hold its shape when placed in the pan
Do not worry if it looks thicker than traditional pancake batter. That is exactly what you want!
It should take 1 minute of continuous mixing for the water and dry mix to be properly mixed (there is no such thing as over mixing our batter)
Is your batter too thin?
Add a small amount of dry mix and stir again.
A thin or runny batter may create pancakes that spread too much, cook unevenly or lose the light, fluffy texture True Taste is known for.
Is your batter too thick?
Add 1 tbsp of water to your batch and mix fully
Step 2: Preheat Your Pan
Heat a lightly greased, non-stick pan or griddle over medium to medium-high heat.
Every stove and pan cooks a little differently, so you may need to adjust the temperature slightly.
The pan should be hot before you add the batter, but it should not be smoking.
Step 3: Scoop the Batter
Scoop the batter into the preheated pan.
Because the batter is thick, you may need to gently shape or spread it into a round pancake using the back of your spoon or scoop.
Avoid spreading it too thin. Keeping some height in the batter helps create a soft, fluffy centre.
Step 4: Watch for Bubbles
Frying Pan: Cook the first side for approximately 1½–2 minutes.
Pancake Griddle: Cooking times vary by brand and temperature setting, but they typically take about twice as long as a frying pan. Don't rely on the clock alone—watch for the visual cues below.
You'll know the pancake is ready to flip when:
✓ Bubbles begin appearing on the top surface
✓ The edges start to look set
✓ The bottom is golden brown
✓ The pancake lifts easily from the pan
Gently flip the pancake and cook the second side until golden brown and fully cooked in the centre. On a frying pan, this usually takes another 1½–2 minutes. On a pancake griddle, allow additional time as needed.
The Three Keys to Fluffy Pancakes
Before you start cooking, check that:
1. You used the correct ratio
1 cup dry mix + ½ cup water
2. Your batter is thick
It should resemble muffin batter—not thin, runny pancake batter.
3. Your pan is not too hot
Medium to medium-high heat allows the centre to cook before the outside becomes too brown.
If all three are correct, you are on your way to deliciously fluffy pancakes!
Troubleshooting Your Pancakes
My pancakes are thin or flat
Your batter may contain too much water.
Double-check that you used:
1 cup dry mix + ½ cup water
The batter should be thick enough to hold its shape in the pan.
The outside is browning before the inside cooks
Your pan is likely too hot.
Reduce the temperature slightly and allow the pan to cool before cooking the next pancake.
My pancake is difficult to flip
It may need a little more time.
Wait until bubbles form on top, the edges look set and the pancake lifts easily from the pan.
My batter seems too thick
A thick batter is normal for True Taste mixes.
It should be scoopable and similar to muffin batter. If it is too thick to mix or scoop, add water one teaspoon at a time until it reaches the right consistency.
Want to Add Even More Protein?
Many customers love replacing the water with liquid egg whites.
Use the same measurement:
1 cup dry mix + ½ cup liquid egg whites
Mix and cook using the same instructions above.
Please note that adding egg whites means the finished pancakes will no longer be egg-free.
