Dairy-Free Lemon Curd Recipe

INGREDIENTS
(
Makes about 1 ½ cups)

  •     3 large eggs
  •     5 tablespoons maple syrup 
  •     1 tablespoon lemon zest
  •     ½ cup fresh lemon juice 
  •     ⅛ teaspoon salt - omit if using salted butter 
  •     1/4 cup butter softened or softened coconut oil

INSTRUCTIONS

  • Whisk together eggs, maple syrup, lemon zest, lemon juice, and salt. Stir over medium heat and stir consistently until mixture thickens (roughly 5 minutes)
  • Remove from the heat and add the softened butter or coconut oil. Let mixture sit for a minute, then whisk it in. 
  • Press mixture through a fine mesh strainer over a bowl. 

Store in an airtight container in the refrigerator for up to one week.
