This easy recipe combines eggs, cottage cheese, spinach, and our True Taste Cafe Buttery Grain-Free Mix to create a crisp, golden waffle that’s anything but ordinary. With sun-dried tomatoes, parmesan, and garlic in the mix, it’s bursting with flavour – and totally free from gluten and other grains. Just mix, pour, and enjoy!

This Recipe Makes: 2 servings

INGREDIENTS

3 Large Eggs
1 tbsp Water
¼ cup Yellow Onion, Diced
½ clove of Garlic, Minced
½ cup frozen Spinach
¼ cup Sun Dried Tomatoes, minced (in oil, rinsed & patted dry)
¼ cup Cottage Cheese
⅔ cup True Taste Cafe “Buttery Grain Free” Mix
1 tbsp Parmesan, freshly grated
Salt & Pepper to taste

STEPS

In a medium mixing bowl, whisk eggs and water together with onion, garlic, spinach, sun-dried tomatoes, and cottage cheese. Add the waffle mix, parmesan, salt, and pepper. Stir until combined.

Heat your waffle iron and lightly oil it. Pour 3–4 oz into the iron. Close gently—do not lock. Cook until golden brown, remove, and let cool.

TOPPING SUGGESTIONS

This makes an excellent sandwich "bread." Try buttering the waffles and topping them with turkey, garlic mayo, and avocado. Serve open-faced or sandwich style.
