Lemon Blueberry Loaf

Ingredients:

- 3 Tbsp Maple Syrup
- 2 cups Dry Mix
- 1/2 cup Water
- 2 tbsp Lemon Juice
- 3 tbsp Lemon Zest Course (equals to one lemon)
- 2 tbsp Oil
- 1 Egg 
- 1 Cup Blue berries (fresh)

Directions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease or lightly oil a loaf pan.
  3. In a large bowl, combine dry mix, water, maple syrup, lemon juice, lemon zest, oil, and egg. Mix until just combined.
  4. Gently fold in the fresh blueberries.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the loaf cool in the pan for 10–15 minutes, then remove and cool completely on a wire rack.
  8. Slice, serve, and enjoy!
