Lemon Blueberry Loaf

Ingredients:
- 3 Tbsp Maple Syrup
- 2 cups Dry Mix
- 1/2 cup Water
- 2 tbsp Lemon Juice
- 3 tbsp Lemon Zest Course (equals to one lemon)
- 2 tbsp Oil
- 1 Egg
- 1 Cup Blue berries (fresh)
Directions:
- Preheat your oven to 350°F (175°C).
- Grease or lightly oil a loaf pan.
- In a large bowl, combine dry mix, water, maple syrup, lemon juice, lemon zest, oil, and egg. Mix until just combined.
- Gently fold in the fresh blueberries.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
- Let the loaf cool in the pan for 10–15 minutes, then remove and cool completely on a wire rack.
- Slice, serve, and enjoy!
