These are some of my favourite go-to gluten-free, dairy-free muffins. They are packed with pea protein for a nourishing, energizing snack. Made with simple ingredients like applesauce and maple syrup, they’re naturally sweetened and incredibly easy to whip up.
Just mix, bake, and enjoy! Perfect for meal prep, post-workout fuel, or a quick snack on the go. Makes 8-10 large muffins or 16-20 mini muffins. 🍓✨
Ingredients
+ 1/2 Cup applesauce
+ 1/2 Cup almond butter (or other nut butter)
+ 1 Tbsp Maple Syrup
+ 3/4 cup water
+ 2 Cups vanilla protein mix
+ Add Raspberries to preference
Makes 8-10 large muffins or 16-20 mini muffins
Instructions
It is as simple as it gets. Only two steps.
1. Oil the muffin tray or use liners
2. Mix all ingredients and bake at 350° C
Mini muffins: 10-11 minutes
Large muffins: 17-18 minutes
