Recipe Yield : makes 8 cookies
Ingredients
- 1 + 1/4 cup True Taste Cafe Buttery or Vanilla Protein "Just Add Water" dry mix
- 1/4 cup coconut sugar
- 1/4 cup chocolate chips
- 1/2 cup butter or coconut oil
- 1 egg
- 1 tsp vanilla extract
Directions
- Mix all dry ingredients except chocolate chips
- Melt butter or coconut oil
- Mix all wet ingredients
- Combine wet ingredients into dry ingredients
- Fold in chocolate chips
- Cover the batter and let sit in the fridge for 10 - 15 minutes
- Remove batter from the fridge and portion out cookies (2 tbsp batter/cookie) on a baking sheet - the cookies spread so make sure you leave enough room between cookies
- Bake at 350 C for 8 minutes
- Let cookies cool on the baking sheet out of the oven for 5 minutes then transfer to wire cooling rack
- Let cookies cool on the wire cooling rack for 15 minutes before eating
- Once completely cooled (1 hour after baking) store in an airtight container . If you find moisture is accumulating in your container place a paper towel in the bottom (this helps soak up any extra moisture)
- Keep on the counter or in the fridge for up to 5 days
