Banana Bread

Recipe Yield: makes 1 loaf

Ingredients

- 1 cup True Taste Cafe "Just Add Water" Vanilla Protein Waffle/Pancake Dry Mix

- 1+ 1/2 cup True Taste Cafe "Just Add Water" Vanilla Protein Waffle/Pancake Dry Mix

- 1/2 cup coconut sugar or brown sugar 

- 1/2 cup butter or coconut oil - softened 

- 2 eggs

- 3 small or 2 large over ripe bananas (300 g) 

- 1 tsp vanilla extract 

Directions 

  1. measure buttery or coconut oil, eggs, vanilla extract and bananas into a high speed mixer and mix on high until smooth 
  2. measure sugar and waffle/pancake mixes dry into wet ingredients in mixer then mix again on medium speed until smooth 
  3. pour batter into an oiled 9x5 loaf pan (this is the one i use)
  4. bake at 350 for 50 minutes 
  5. let cool for 15 minutes in pan, then another 15 minutes on wire rack before cutting 
  6. let cool completely for 1 hour 
  7. store in an airtight container with a paper towel in the bottom ( this helps soak up any extra moisture) 
  8. keep in the fridge for up to 5 days
